Father's Day

So, yeah, forgot to blog about Father's Day BEFORE Nick's school trip.  Sorry, honey.  The weird thing is, they don't celebrate Father's Day here in Switzerland.  At all.  Not even a token mention in church.  So sometimes it sneaks up on me.  That is what happened this year.  In all the drama of getting Nick correctly outfitted and packed for his big trip, we sort of forgot about Father's day.  Not totally forgot, just didn't have time to make a card, create a gift, and do the whole shebang like normal.  However, I did cook whatever Chris wanted to eat that day, and the kids made sure to wish him a happy Father's day and let him have his way all day.  :)  He also got a nice long nap, which honestly, is the only gift he really wanted.

I baked a huge apple pie, using a new recipe with two different kinds of apples in it, in Chris' honor.  It was totally delicious.  In fact, it was so good, everyone asked me to make another one very soon.  So I did, less than a week later, in honor of Nick coming home from his trip.  The second pie disappeared as fast as the first one.  So my tip to you, dear readers, is to use half Granny Smith apples and half-whatever red apples you have on hand.  The Granny Smith stay firm, the red apples go mushy, and you get delicious perfection in every bite.

Chris, you are a fantastic father.  The kids may complain that you are too strict sometimes, but deep down it gives them a sense of security in this ever changing, scary world.  Also, you are an absolute pushover in many respects, and they know this, too.  When I hear my children say, spontaneously, and without prompting, "Papa really loves us, huh Mom?"  I can unequivocally, without any reservation whatsoever, respond very forcefully in the affirmative.  "Yes, yes, he does."  Thank you for being such a wonderful father to our crazy bunch of munchkins.
