Sophie loves to help me cook. All the kids have, at one time or another. Especially when it involves cookies. 🙂 But Sophie consistently asks if she can help me cook, no matter what is on the menu. She has helped me with one dish so often, she can now prepare it entirely on her own. It is a recipe from Jamie Oliver, but in our house we just call it Sophie’s Salmon. It is soooo good! She will often make it for us Sunday after church, and I will make the sides; rice pilaf and green beans or broccoli. Want to know the recipe, so you can be as good a cook as Sophie?
Take however many salmon fillets you want to eat, and lay each one on top of a slice of prosciutto. Cover the salmon with 2 tablespoons of plain yogurt, and season with salt and pepper. Wrap the sides of the prosciutto over the top of the fillet, and drizzle about 1 tbsp of olive oil over the entire thing. Bake at 350 for about 20 minutes-25 if your fillets were still a bit frozen to begin with. heehee. Enjoy!
